Yes, this fried eggplant tastes as good as this photo looks -- I won't lie to you on that. When I made my first batch from a recipe I found, I wasn't too pleased with it so I tweaked it and made it my own!
I had fully intended on making eggplant parmesan (because I used three medium sized eggplants), but these were so good, that they disappeared as quick as they were placed on this plate!
